A simple main dish, full of flavor and very filling! You will never miss the gluten or dairy! You really can change up the herbs, depending on what you have on hand! Make this work for you!
Herb Crusted Pork Tenderloin
2T minced garlic
2 tsp fresh or dried basil
2 tsp fresh or dried rosemary
1-2 tsp avocado oil
1 tsp each salt and pepper
Mix ingredients together and rub over tenderloin. Place on an elevated baking rack to allow tenderloin to form a crust.
Bake at 400 until internal temperature reaches 145. You can turn the broiler on for the last 2-3 minutes of cooking to give the tenderloin a nice crust. Allow to rest several minutes before slicing.
