Happy Fall from RI Health Coaching!
This is my favorite time of year! I love the cooler temps, beautiful foliage and I always look forward to a trip to the mountains with my family, where we spend time in the town where my grandmother grew up and visit the apple orchard to pick apples with our children. We love making applesauce together with the variety of apples we pick. I hope you will enjoy my recipe for crockpot applesauce!
Crockpot Applesauce
10 organic apples washed and sliced (with skin on)
1-2 Tablespoons of cinnamon or 1-2 cinnamon sticks
½ tsp nutmeg
½ tsp allspice
1/2 tsp cardamom
½ cup of water
Combine all ingredients in a slow cooker for 6-10 hours or until desired consistency. Use a mashing tool or food processor to blend to desired consistency. If using cinnamon sticks, remove before mashing. Store in a glass container or mason jar in the fridge for up to a week.
Let’s talk about orange! Orange foods, that is! Orange foods help protect the immune system, eyes, and skin and reduce the risk for cancer and heart disease. Find creative ways to add orange foods into your diet this month. Here are a few of my favorite “orange” recipes. These are gluten and dairy-free as are all of the recipes on our coaching portal!
Butternut Squash Soup
(Double to serve 6)
1 butternut squash (cut in half long ways, seeds removed)
1 T garlic
Salt and pepper to taste
1 ½ cup chicken broth
¼ tsp nutmeg
½ cup of milk alternative (we like coconut milk)
Slice squash in half long ways and oil each half of squash and sprinkle with salt and pepper. Roast for approximately 1 hour at 400 degrees. Scrape contents into a blender and add garlic, nutmeg and chicken broth and coconut milk. Puree until desired consistency.
Herb Roasted Carrots (makes a great side dish)!
12 carrots, sliced in half lengthwise, or leave whole (remove tops)
½ tsp salt
½ tsp pepper
2 T of dried dill
½ tsp garlic powder
2 T oil (I like avocado oil or coconut oil for roasting)
- Combine all ingredients in a bowl and combine. Roast for 20 minutes at 400 degrees

Our Group Health Coaching Meetings on each topic will be offered monthly. During each 1.5 hour meeting, we will get to know each other and go deeper on each topic with others from Robinhood Integrative Health. We hope this will be a place where you can learn and share, receive support and form a community. I will be available to help you with a personalized lifestyle plan, answer questions and support you with the health goals you and your practitioner have to help you move toward greater wellness.
